Patrick and Barbara Miolane work the whole of the estate on lutte raisonnée principles, with the aim of conserving the environment and reducing chemical treatments to a minimum. They do not use herbicides, for instance, and each plot is ploughed/cultivated to ensure that the soil is well aerated and receives plenty of oxygen.

The vines themselves are carefully and expertly managed. The operation of echitinage (the Burgundian terms for ébourgeonnage, or removing a proportion of the new shoots) is scrupulously performed from May onwards. Harvesting does not begin until the grapes are fully ripened. The hand-picked bunches of pinot noir and chardonnay grapes are first sorted on a vibrating table.
